So I'm looking to buy a HDTV soon, I'm looking for either a 37" or 42" LCD. I don't really know much about this stuff, if I should go 720p or 1080p. I want it mostly for playing video games and watching hockey games in HD. I'm trying to stick to a budget of $1,000 max. What would you recommend or what should I stay away from?

I was planning on waiting until around the holidays when prices seem to bottom out a bit. Maybe right after. I don't watch much TV or video games. Mostly for movies.

1080p will give you the best picture. The P or the I that comes after the number refers to what kind of field will be presented for the frames of video...
Basically, if you have a 1080i picture, the i stands for Interlaced, and for every frame of video, there are actually 2 pictures that are shot up on screen to make the frame whole (Even and odd fields). 1080p, p stands for Progressive, and that is 1 frame, 1 field per second = better picture.
Don't get me wrong, 1080i is still pretty good, but if you are going to watch sports or fast moving images (action movies/racing/hardcore porn) than, most 1080i tvs give you the option of switching to 720p... which will help with clearing up moving images.
The other thing to look at is contrast ratio. That makes all the difference between $500 37" tvs and $1500 37" tvs. The higher contrast ratio, the better obviously. Unfortunately, most HDTV manufacturers calibrate their contrast ratios to different standards, so a 15,000:1 Samsung may look just as good as a 10,000:1 Sony (just an example, not a fact).
The best advice I can give is to go into the stores and look at the TV's in your price range. Try going through the controls and adjusting the picture. If it looks real crappy, don't go by that... Most of the time, the employees just take a tv out of the box and plug it in and don't do any image correcting.
If I were to recommend an HDTV, I'd go with a Samsung. Every HDTV I've seen of theirs, I've been very impressed with.

Always go with a TV that is P-standard, JT is right. Interlaced is better for still images, just don't go with a DLP set even though its cheaper, LCD or higher is good. I own a samsung 1080p, and it's fucking dandy.
